Grilled Chicken Salad

Marinate a boneless skinless chicken breast in fat free Italian dressing. Grill (I use George Forman Grill). Mix desired salad greens, veggies of choice. Sprinkle with 2% or fat free shredded cheese. Cut chicken breast into strips and arrange over salad. Serve with light or fat free ranch dressing.

Start with something like pate with melba toast, you don't have to do a thing really apart from put it on a plate with a small side salad! Or you could do garlic mushrooms with crusty bread. Just melt some butter and chopped garlic in a pan, add some mushrooms and lots of parsley then serve with hot crusty bread. For main course you cannot go wrong with my speciality bacon wrapped chicken. Chop some garlic and thyme then mix with olive oil and cover some chicken breast with it. Then wrap bacon round them and oven cook for about 30 mins. Serve with roast potatoes and veggies of your choice. Pudding would be either some shop bought dessert if you can't make your own or try doing a cheesecake or crumble. I have done this menu so many times in the past and it always goes down extremely well as you don't end up slaving away in the kitchen all night. Good luck!

A quick and simple recipe:
Place some chicken breasts (1 per person) into an ovenproof dish with broccoli and carrots. Mix a can of Campbells chicken soup according to the label and stir in a pinch of curry powder, then add to the chicken and veg. Bake in the oven for 45mins to an hour on 190C. Serve with jacket potatoes. Yummy!

3 cooked boneless chicken breast
1 1/2 c. water or chicken broth
1 sliced onion
1 pkg. fajita seasoning
2 chopped bell peppers (red, green, or yellow)

Cut chicken breast into strips. Simmer strips in water or broth until just about done. You then place the strips in a skillet along with 1 cup water or broth, seasoning, onions and bell peppers.You should allow this to simmer until the chicken is done and the sauce becomes thick. Add remaining water or broth (1/2 cup) and simmer 10 minutes. Recommended Toppings: Lettuce, Tomato, Refried Beans, Lettuce, Sour Cream, Salsa or Tortillas. Season thawed chicken pieces w/ salt, pepper and garlic powder, then arrange in a baking dish. Dilute 1 can of Cream of Mushroom soup with 11/2 cans of water and pour around chicken pieces. Cover w/ foil, and bake in a 400 degree oven for about 1 hour. Remove foil for last 10 minutes to brown chicken pieces. Serve over hot rice.

20 Minute Chicken Parmesan

4 bonless chicken breast halves
1 egg, slightly beaten
1/2 cup seasoned bread crumbs
2 tablespoons butter
1 4/3 cups prego spaghetti sauce
1/2 cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese
1/4 cup chopped fresh parsley

Using palm of hand, flatten chicken to even thickness. Dip chicken into egg then into crumbs to coat. In skillet over medium heat in hot butter, brown chicken on both sides. Reduce heat. Cover, simmer 10 minutes. Sprinkle with cheese & parsley. Cover, simmer 5 minutes or until cheese melts.
Makes 4 servings.

Cut up some chicken, dice some potatoes (1 in cubes), cut up some veggies you like (we use green peppers, onions, tomatoes, and whole mushrooms) and throw it all into a crock pot (potatoes on bottom, then meat, followed by veggies and salsa). Then dump a jar of salsa over it, with just a little of some kind of butter flavored spread, and cook on low. It gives the meat a good flavor, but the potatoes are my favorite part. My mom makes it all the time, and it's awesome! Not sure how long she leaves it on, but it's usually over night.

Baked chicken- get skin on, bone in chicken, squeeze on fresh lemon juice, put on salt, pepper, garlic powder, cumin and herbs like parsley, cilantro, or basil. You could also put on ginger or curry powder if you want it spicy. Cover in foil and bake about 45 minutes at 350. Add salad and rice for sides.

Chicken Veggie Soup- In large pot sautee onions in some olive oil and add cut up boneless, skinless chicken. Brown the chicken. Add several cloves of garlic and 3 chopped tomatoes. Add salt, pepper, cumin seed, cloves. Add plenty of water. Heat to boil then reduce heat to light boil and cover. In about 20 minutes add lots of whatever vegetables you want such as a bag of mixed frozen veggies. Then let it cook for another 20 minutes.

One that my family really loves is to take boneless skinless chicken breast, split in half and fill with cream cheese and sliced green onion, then wrap the chicken in bacon and then secure the bacon with a tooth pick. Then you just bake on 400 until the chicken is done.

5 chicken breasts (or you could use other chicken parts too)
2 cans cream of chicken soup
1/2 cup sour cream
1 sleeve of ritz crackers
1 tablespoon poppy seeds

preheat oven 375
boil chicken beforehand, chop into bite size pieces
mix with soup and sour cream
crunch ritz crackers on top and sprinkle poppy seeds
cover with aluminum foil
bake 25 mins, uncover and bake another 5-6 to brown the crackers
serves 4
(can be eaten with rice, too)
