Due to work I get a behind the scenes peek into a few local restaurant kitchens throughout the month. One night I watched as they made up hot sauce for the chicken wings (which always smells sooooo good, lol). I watched and saw that the two main ingredients were Frank's Red Hot Sauce, and some wine. I thought to myself "if you eat that, would it affect you as if you are having a few sips of wine?" I don't drink due to medical reasons, and after eating a few that were offered to me tonight I felt a little funny. Could it have been all in my mind, or would wine mixed with hot sauce have the same effect as if it was by itself?

I hardly think that there is a sufficient amount of alcohol in the scant amount of sauce which adheres to a chicken wing to get you drunk.

Perhaps you were having a reaction to the hot sauce itself, the vinegar, and the capiscum which is in the peppers. Or maybe you just had a placebo effect from 'thinking' yourself drunk.

The alcohol content in the wine would be removed in the cooking process in a recipe like this. I don't know what sort of medication you take, but it shouldn't affect you. Did this sort of thing affect you before you knew how these sauces were made. If not, then I think you have your answer...it may be in your head. I am not supposed to drink ANY alcohol with the medication I am taking and I had a half a glass of wine after supper one night. I couldn't finish it because it started to make me feel dizzy. Another time I had some wine jelly I made from actual wine and it did not bother me at all. The alcohol was "boiled" out of it in this case too. Hope this helped.

Well, a few sips of wine, especially when taken with food, won't get you drunk. I'm pretty sure it was in your mind. Some (not all) of the alcohol would also have evaporated if the food/sauce was steaming hot.

If it is cooked, the alcohol should evaporate. Just the wings and hot sauce is enough to make you feel funny, due to the fat content of wings and the spice in the hot sauce.

The amount of wine in hot sauce probably isn't enough to make you drunk and if you were to drink enough of it to make you drunk, then you would probably be better off drunk anyway. ;)
