In a recepie for Gingerbread cookies in a book that I have it calls for "1 teaspoon of double-acting baking powder". Is this a specific type of baking powder or will regular baking powder work?
Any insight would be lovely!

All commerical bakign powder is double-acting.

1st action: bubbles when you mix it w/ liquid, causing lightness
2nd action: when heat hits it, gas is given off and the product rises

U would have to leave regular baking powder longer in the dough for it to have the same effect as the other one...No real diffrence...
