I believe that the Fillet o' Fish patty is slightly smaller (narrower) than a full slice of McDonald's cheese. So, instead of letting the cheese hang over the sides, they use just half a slice.

Maybe they were running low on cheese slices? I've had it both ways, sometimes it comes with a small slice of cheese, and other times, it has a full size slice.

In Philadelphia, PA it comes with a full slice of cheese. That's strange that it's a half-slice where you are.
