You may be able to improvise with other ingrediants, for example use some type of cream instead of butter, or just exclude the materials all together though you should probably replace them with something. Recipe's that call for egg can sometimes just be replaced with milk, salt is just a spice and not really necassary for the overall great taste, but there's a lot of alternative products at the supermarket or even online that you can look into.

I think making Ambrosia would fit the bill. You can adjust the amount of each ingredient to make as much or as little as you might want. I like it as it is not too sweet.

1 can of Mandrin Oranges Drained
Juice of 2-3 Lemons
1-2 Apples that area really crisp
Bag of Shredded Coconut
Bag of small/ mini Marshmallows
1 or 2 Tubs of Non Dairy Whipped Topping, from freezer section
1 small can of chunk pineapple or rings, drained.
2-3 Bananas depending on size, sliced

To prepare, drain the canned products and dump in bowl. Juice lemons and reserve juice in bowl so you can dip apple and banana bits in to retard browning of the fruits. Core and cut (peel it if you prefer) apple in to bite size bits and do the same for the banana and dip them in the lemon juice before tossing in with other fruit.

Once you have all the fruit in the bowl dump in one tub non dairy topping in and mix well to coat all the fruit bits. Then add shreaded coconut and mini marsmallows and stir to coat all ingredients. I always have the second tub of topping in case the balance of ingredients which are not exact leave you where you are looking skimpy on the topping. If it looks like the fruits are barely covered then open second container of topping and add more topping until you are pleased with the balance of ingredients. Then put in the fridge to chill.

It is not a difficult recipe and all you need to do is chop and dump in a bowl and stir. I believe it is low in salt as I don't like salt and it is milk and egg free. Goes over Big at Pot Luck dinners. Also note that you can adjust the quanity to taste. There have been times when half a small can of pineapple as I had a guest that was not crazy about it. As for me I have food allergies and can eat this as it does not have eggs or milk.

STRAWBERRY ITALIAN ICE

1 pt Strawberries, fresh, trimmed

1/4 c Sugar

2 t Lemon juice, fresh

2 c Ice cubes (about 11)

Put a 9 or 10-inch metal cake pan in the freezer. In a blender, blend the strawberries, sugar, and lemon juice until the mixture is smooth and the sugar is dissolved. Add the ice cubes, blend the mixture until it is smooth, and pour it into the cold pan. Freeze the mixture for 30 to 40 minutes, or until it is frozen around the edge, but still soft in the center. Stir the strawberry ice, mashing the frozen parts with a fork, and spoon it into 2 bowls.

The salt in certain recipes are usually for taste only. You can omit the salt in just about any recipe. I wasn't able to find a recipe without the salt or fat in it. Angel cake without the salt is a good choice with fresh fruit. You can als ask his doctor for recipes that would be good for his diet.

Good luck!

How about whipped jello? It looks decorative, tastes fruity, and has none of those things in it.
