If you don't have veggie oil, I suggest you just use melted margarine or butter. This will be better tasting in a cake recipe. Using olive oil can alter the sweetness / richness of the cake.

I just used olive oil in my cake right now. I looked this up vecause I ran out of vegetable oil, and olive oil was all I had. The cake tastes fine to me, I know it's not the HEALTHIEST, but it still tastes fine. It has a bit of a taste of the olive oil, but nothing too strong.. Would I use it again though? God no, I like my cakes FULL of flavor with no interruption lol.
But if you want your cake moist and spongy like I do, I recommend using olive oil, but not too much.
Hope this helped!

The only thing about olive oil is that is has its own taste; otherwise it is a great oil to interchange in just about any recipe. But for regular cakes and cookies, it is best to use canola or safflower oils.

I wouldn't suggest using olive oil in a cake. It may turn out to look pretty nice, but it will probably not be a taste you'll like.

I have used olive oil in banana bread in a bread machine (Zojirushi). Taste wise, no difference, slightly darker in appearance, moister, and didn't rise quite as much making denser, moister and more cake like. All in all, still worked, definitely edible.

If you have pure olive oil you can substitute it for veg oil. If you have extra virgin olive oil then you cannot. Pure has virtually no taste and is more heat stable than extra virgin.

No, you cannot substitute olive oil for vegetable oil in baking. By any chance do you have any margerine or butter? Either one are acceptable substitutions for vegetable oil!
