is more economical to make than to buy smoked salmon. You can make lots at a time and freeze it.

Buy a fresh fillet of salmon. Salmon tails are the best price. Ask to remove the skin... it'll make the salmon pure pink.

Put the fillet on a piece of saran wrap. Pour a tiny bit of vodka or whiskey on the fish. Optionally, place fresh dill on top of the fish. In a bowl mix equal parts sugar and salt.Pour this mixture over the fish. Don't be skimpy. Make sure that the fish is entirely enveloped in the sugar/salt mixture. Cut another two pieces of saran wrap and wrap tightly. Place the package in the fridge and wait 24-48 hours. The longer you leave the fish in the fridge the saltier it will get. Unwrap the fish in the sink and rinse off the mixture with water. Pat dry. Voila...Gravlox! Cut the gravlox into smaller slices and garnish with fresh dill.

In short if its smoked you don't have to cook it. Just slice it thin and fan it out on a platter. For some garnish and accompaniments use hard boiled eggs, separate the yolks from the whites and chop fine along with red onion and capers some bell peppers look nice and you need crackers and some rye toast or some kind of bread.

Smoke the salmon.Trim the fleshy side carefully,remove all bones with tweezers.Slice thinly,starting at the tail end, and cutting at an angle towards the tail.Rub the salmon with oil and wrap in an oiled paper.Hang in cool place to dry.Serve withlemon capers and thin slices of brown bread and butter.

Muffins, crepes and have different fruits to fill them with, thinly sliced lunch meats (minus pork products) with condiments and bread choices, a chilled pasta salad, smoked salmon on small pumpernickel cocktail bread (put some herbed butter on the bread before putting the salmon on), marinated and roasted vegetable tray (serve chilled- slice lengthwise thinly and marinate squash, zuchinni, red peppers and eggplant in italian dressing, then grill the night before), thick slices of tomatoes, avacados, and red onions, etc. Good luck!

I'm confused. You want to smoke salmon and serve it cold. You want to know how to serve lox. You choose, or explain further.

You don't cook salmon if it is smoked. No need to.
