Spaghetti & meat sauce. Boil some water, fry up some hamburg, heat some good spaghetti sauce, sprinkle some parmesan cheese. Etc. Easy, Good and Healthy! Variation -- use sausage or even small shrimp instead of hamburg.

Get a filet of white fish for each of you, an onion, a zucchini, some yellow squash, a tomato, a green pepper, 3 cloves of garlic, and four mushrooms. Preheat the oven to 400 degrees. Cut the veggies up into small pieces. Rinse the fish, pat it dry, and place each piece on its own large piece of foil. Rub the fish with olive oil on each side and season with salt and pepper on each side. Divide the veggies and garlic between the two filets, and pour 1 tbsp olive oil over the veggies. Season with salt, pepper, garlic powder, and basil. Sprinkle some red pepper flakes on top if you'd like, and definitely squeeze the juicy of half of a lemon over each portion. Tightly seal the fish and veggies in the foil and bake at 400 degrees for 20 minutes or until the fish flakes easily with a fork. Serve with a side of rice or pasta!

Buy chicken breast fillets season with salt pepper & drizzle with any olive oil place it on a cast iron grill or in a teflon pan. Pour about 1 tblespoon of olive oil in whatever your cooking in & cook the chicken under medium heat until cooked on both sides.Also get a box of parmasen cheese pasta roni follow directions on box ( takes about 10 min).Once chicken is done a bag of mixed veggies in micro on high for about 1-2 min (don't overcook).

My favorite healthy dinner for 2 is Gorton's Grilled Salmon Fillets (bake at 400 degrees F for 15 minutes) and steamed broccoli with Mrs. Dash seasoning. For dessert, make fruit parfaits with low-fat vanilla yogurt, fruit and granola!
