Try a cheesecake. Not as hard as you might think. Try allrecipes.com they have a whole section devoted to making the perfect one. Step by step help. I've tried it and it really works.
If you want really easy you can do mini cheesecake in a muffin tin. Those are a breeze, you can find the recipe there also.

I like to make a carmel-apple pie. But it's Christmas, you can bake all kinds of cookies and candies. Make some white chocolate covered pretzels. Easy, breezy!

How about Black Forrest cake? It's pretty easy!
1. Make your favorite chocolate cake in a 9x12 pan. Bake & cool according to the directions on the box.
2. Once it's cool, cut the cake in half so you have 2 sheets of cake.
3. On layer #1, spoon on 1 can of cherry pie filling. Add 1/2 tub of cool whip on top.
4. Add the 2nd layer and "frost" w/remaining cool whip.

It's much lighter than regular cake and very very good!

What about a no bake cheesecake? Very simple, kept cold, creamy, and you can use whatever canned fruit topping you like.

This is something I've done:

You will want a red jello, a green jello, and instant pudding (Vanilla or banana).

Make your green jello first and pour into glasses or clear bowls, and let set. Then repeat with your pudding, and with your red jello. If you like, you can top with whipped cream and sprinkles.

Enjoy!
