I need a recipe for mints.These are made out of cream cheese and powdered sugar.

1 1Lb box Confectioner's sugar
1 8 oz pk Philadelphia Cream Cheese (softened)
1 T peppermint or spearmint (my fav) oil
Food coloring
Work sugar into the cream cheese, add oil and knead until well incorporated
Separate dough & add food colorings of your choice a drop or two at a time until you have the desired color.
Roll into a small ball coat in granulated sugar and press into mold. When shaped release from mold. These last a long time. Over time they will harden but, do not lose thier flavor. Be sure to cover securley.
They don't all have to be flavored with mint either. you can use orange oil and color them orange, or yellow & lemon. Be creative.

Cream Cheese Mints

1 3-oz pkg. cream cheese (room temperature)
1/4 - 1/2 tsp. flavoring (peppermint, butter, almond, wintergreen or whatever)
food coloring or colored sugared (optional)
2 1/2 - 3 cups powdered sugar

Mix cheese in bowl until soft. Add coloring and flavoring and gradually add the sugar. Mix and knead until it is the consistency of pie dough or putty. Roll into balls the size of a marble. Dip in granulated sugar and press firmly into a candy mold. Unmold at once onto waxed paper. Once firm transfer onto a cake rack and let dry for a few hours. They will keep a long time if you store them in an air-tight container. Makes about 6 dozen mints.

You can omit the food coloring and roll the mints in colored sugar.

If you don't have candy presses, roll the mints and then flatten with a fork for a pretty design.

"Butter Mints" - 60 mints

1/4 cup butter; softened
1 (16 oz.) pkg. confectioners' sugar
3 tbsp. heavy cream
1 tsp. peppermint or wintergreen extract
Few drops red or green food coloring (optional)
Sugar

1) In large bowl with mixer at medium speed, cream butter. Add half of the confectioners' sugar, cream, extract and food coloring; beat until smooth. With wooden spoon or hands, work in remaining confectioners' sugar until smooth.
2) Shape mixture into 1/2" balls; flatten with a fork dipped in granulated sugar (or shape with candy molds). Let dry on wire racks 1 hour. Yields 1 pound.
CREAM CHEESE MINTS: Prepare as above, but substitute 1 (3 oz.) pkg. cream cheese; softened, for butter.
(TIP: Keep mint mixture covered with damp cloth while shaping candy to prevent mixture from drying out. If mixture becomes dry, add a few drops of water.)

BUTTER MINTS
1/3 c Butter
1/3 c Karo
1 lb Confectioner's sugar

Melt butter. Stir in Karo til blended.Pour over Conf. sugar and work into
a dough. Flavor and color as desired. Make ball, press into granulated
sugar (only one side.) Press the sugared side into a rubber mold. Turn out
at once. Let air-dry 8-12 hours. Freeze leftovers well.



Easy Buttercream Centers
1 package (3 ounces) cream cheese softened
1/2 cup butter, softened
1/4 cup powdered sugar
1 1/2 teaspoons vanilla extract
In large mixer bowl, beat cream cheese and butter until smooth Blend in powdered sugar and vanilla. (If necessary, chill about 1 hour or until mixture is firm enough to handle.) Shape into 1 inch balls; place on wax paper covered tray. Cover loosely; chill 3 to 4 hours or overnight. Centers should feel dry to touch before coating. Coat centers as directed About 5 dozen centers
Variations: Divide mixture into three parts. Add any of the following flavor variations to thirds of the mixture as desired.
2/3 cup flaked coconut
1/2 teaspoon brandy extract or almond extract
1/2 teaspoon strawberry extract plus 3 drops red food color
1/4 teaspoon rum extract or orange extract
1/4 teaspoon mint extract plus 3 drops green food color.

Combine ingredients thoroughly. Different flavorings and colorings may be used to suit your purpose. Press into molds and pop out. May be kept in the freezer until ready to use.
