We use Earthbath Orange Peel Oil shampoo. It's very gentle and soothing to their skin and leaves their coat soft & shiny. Be sure you aren't bathing too frequently and try adding some Salmon Oil (we use Grizzly Salmon Oil) to the dog food.

Oatmeal Shampoo is excellent for dogs with dry skin. Also there is one I get from my vet called Animal Pharmaceuticals - G/Aloe and Oatmeal. It is safe enough to use everyday and smells great but best of all it helps with shedding. :)
