I read an article once that said I could put something on cheese when I put it in the refridgerator to keep it from getting moldy, and I can't remember what it was , does anyone know what to do ?

Forget chemical stuff... the cheese (most all cheese) is packaged in a near stirile environment. When you handle cheese, shredding, grating, slicing, (whatever) don't allow contact with human hands or contaminated utencils.

I keep Cheddar and Montery Jack in my fridge in 5 lb blocks. They last months without mold if not contaminated. Don't touch cheese with bare hands untill eating. Use condoms on your fingers...or sumpthin...

Wrap it tightly in Saran Wrap to keep fom moisture and air from getting in it.

waxed paper works really well for me. Plus, you need to make sure your cheese is covered well and not exposed to air or else it will get hard and/or mold on you for sure.
