my aunt used to make it that was her thing for the holidays but my uncle and her divorced so now im gonna try to start a new tradition

Easy Peanut Butter Fudge

1 cup creamy peanut butter
2 cups granulated sugar
1/2 cup water
1/4 tsp vanilla

In a pot, bring sugar and water to a boil. Let the mixtures boil for EXACTLY one minute.
In a bowl, have the peanut butter and vanilla measured out and ready.
Pour the sugar and water into the bowl when ready, and mix well. Pour into 8x8 in greased pan.
Let cool, and enjoy!

Some notes: Don't use the natural peanut butter. I tried using Adam's Natural once and it didn't work.
You have to use the creamy peanut butter like Skippy.
Once you pour the sugar and water into the bowl with the peanut butter and vanilla,
it'll start to harden up, so work quickly.

Chocolate-Peanut Butter Fudge Squares:

3 cups sugar
1/2 teaspoon salt
1 cup milk
1/2 cup butter
3 tablespoons creamy peanut butter
1 teaspoon vanilla extract
1 (8-ounce) package semisweet chocolate squares
1 teaspoon shortening
Garnish: peanut halves

Combine first 4 ingredients in a saucepan; cook over medium heat, stirring constantly, until sugar dissolves. Cover and cook 3 minutes; uncover and cook, without stirring, until candy thermometer registers 236° (soft ball stage). Remove from heat; add peanut butter and vanilla.

Beat at medium speed with an electric mixer until thickened; pour into a buttered 8-inch square pan. Score into 1-inch squares with a knife; cool. Cut into squares.

Microwave chocolate squares and shortening in a 2-cup glass measuring cup at HIGH 1 1/2 minutes or until melted, stirring twice.

Dip fudge squares into chocolate mixture; place on wax paper. Garnish, if desired; let stand until firm.

Yield: Makes 5 dozen

Melt a cup of peanut butter together with 2/3 stick of margarine in the microwave. Mix that well and stir in about 2-3 cups of powdered sugar (start with 2 and add more to get a sugar cookie like consistency), then press into a glass pan. If desired top with melted chocolate chips and refrigerate to set it up.

"Peanut Butter Fudge" - 16 large squares

2 tbsp. butter or margarine
1 (4 oz.) can evaporated milk
1 2/3 cups sugar
1/2 tsp. salt
1 tsp. vanilla extract
1 1/2 cups peanut butter pieces
2 cups miniature marshmallows
1 cup semisweet chocolate pieces

Butter 8x8" pan. Simmer butter or margarine, milk, sugar and salt 4 to 5 minutes, stirring, until melted and smooth. Remove from heat; vigorously stir in vanilla extract, peanut butter pieces and marshmallows until melted. Pour into prepared pan; cool.
Melt chocolate pieces over hot water; spread over peanut butter mixture. Refrigerate at least 2 hours; cut into squares.


"Chocolate-Peanut Butter Fudge" - 3 dozen

2 1/2 cups sugar
1/4 cup cocoa
1 cup milk
1 tbsp. light corn syrup
1/2 cup butter or margarine; divided
1 cup finely chopped pecans
1/2 cup peanut butter
2 tsp. vanilla extract

Combine first 4 ingredients in Dutch oven or large pot; cook over medium heat, stirring constantly, until sugar dissolves. Add 2 tablespoons of the butter; stir until butter melts. Cover and boil mixture 3 minutes.
Remove cover and continue to cook, without stirring, until mixture reaches soft ball stage (234*). Remove from heat, and without stirring, add remaining butter, pecans, peanut butter and vanilla. Cool 10 minutes.
Beat mixture until well blended; pour immediately into a buttered 9" square pan. Cool and cut fudge into 1 1/2" squares.
