A real rum is much better then rum essence.

I'd say yes, but not in the same quantity. Rum essence is concentrated. It would depend a bit on the recipe you were making. If a recipe called for 1 tsp of rum essence, I would expect you'd have to use about 1 cup of rum to get the same amount of flavour. This larger proportion of liquid in the recipe could make a big difference, however. You will probably want to boil down the rum to a highly concentrated reduction, and then use that instead of the rum essence.

It certainly can and it will taste much better. The "real thing" is nearly always better than a synthetic substitute.

If anyone is getting excited about the prospect of having alcohol in the rum, you can heat it in a small pan. Alcohol boils at about 70 dgrees C , so you can boil it off if you want

rum should not be used for cooking since it isn't made for such. cooking wines such as sherry are formulated for cooking, but also for drinking, but that is just what they are formulated for. regular sherry is too strong for cooking, but cooking sherry is not very good if you just drink it. rum, a harder alchoholic drink is only used for a few dishes, and is not really used for cooking but for drinking and as a mixer. when cooking with alchohol, the alchohol burns up and leaves only the flavor of the remaining portions of the drink, adding flavor, but no alchohol.
