Keep your napkin on your lap instead of laying it on the table. When you are finished with your meal a paper napkin can be folded and laid on the plate. A cloth napkin goes on the chair after you stand up to leave.

I particularly like the Western Silver Etiquette web site for answering my etiquette questions.

com/etiquette.htm

(sorry I had to split it up or the link wouldn't take you where you needed to go)

Open the napkin below table level and place on your lap. Chew w/your mouth closed. The food goes to your mouth, not your mouth to the food. Relax and have a good time.

Use fork and knife to cut and eat, i.e. don't cut with your fork, it's childish. Don't put elbows on the table, but also don't hide your hands under the table-rest your forearms on the table's edge (it isn't very comfortable, but it looks best). Don't reach over anyone's plate to fetch salt/pepper, etc. Be polite. Chew with mouth closed, etc., etc. Don't worry too much, just relax and be confident, it's not too hard.

Put your Napkin on your lap. When eating soup scoop with your spoon away from yourself. If eating meat only cut one piece at a time. Put your knife down. Then eat the piece you cut.

Don't try to speak Spanish to the help. No one cares if you know 2 phrases.
