Can I suggest you take different approach? I know nasty yams with marshmallows are like a staple of the holidays but do you really want to be the one to bring them??? Try my recipe and people will think you are a yam master!!!
mash your yams with some milk and a couple eggs and add a little sugar but not a lot- for one can maybe 2 tbsp and a little salt like 1 tsp and put in a casserole/ baking dish. Then in a little bowl combine like half a stick soft butter with 2 tbsp brown sugar and like 1 tbsp sugar and like 1 tbsp flour and some walnuts on pecans and crumble that on top of your yams and bake at 350 for about half an hour. Very simple very tastey!

Well the way I make mine and it was a big hit for thanksgiving. I mash the canned yams about 2 cans and add 1/2 a cup of brown sugar. put the yams in a round casserole dish. Then crumble up some pecans and graham crackers. Mix the pecans and graham crackers with a cup and a half to 2 cup of brown sugar. Then bake till brown and crunchy on top.

Southern Candied Yams, they are prepared without precooking the yams, and without adding any liquid other than melted butter ... they are pure heaven! 6 RAW yams, peeled and cut into 1/2 inch thick slices 1/2 cup butter 1 1/2 cups white sugar 1 ts cinnamon 1/4 ts nutmeg 1/4 ts ground ginger 1 ts vanilla extract Mix sugar with dry spices in a small bowl. Melt butter in a large pan, add raw yam slices, pour sugar over the yams, cover and bring to a boil. Stir, add vanilla, reduce heat to low-medium, cover and let it simmer, occasionally stirring them until the yams are cooked through, anywhere between 35 and 45 minutes.

Take 2 large cans of yams & mix with sugar, brown sugar, 1 egg, cinnamon, nutmeg & 1 stick butter. Bake @ 350 for about 40 - 45 minutes. In a saucepan, melt together 1 stick butter, 1 cup frosted flakes & pecans. Top casserole with mixture & return to oven til golden brown.....Save the marshmallows & make some s'mores with those....

Mix yams,1/2 cup brown sugar,small amount butter,and sprinkle with the marshmallows.Bake at 350 for about 25 mins.

here i go again !!!.... when i do candied yams i peel em boil them for 20 min than i drain em mash em with a bit of butter or margarine a little salt and pepper than i take that and place it in a casserole dish and place my marshmallows on top than i place that in the oven at 300 degrees and let them melt mmmmm..... now i want candied yams thanks guess I'll go make some yummy

the way i do it is on medium to high heat prefer medium. just marshmallows and yams cook until the marshmallows are completly melted and the yams look like candy pretty much how you do it.
