What's the best and easiest way to cook Walleye. Preferably fry it.

Step one: make a wash with:
2 eggs
splash of buttermilk
1 tbsp of melted butter
whisk ingredients into a medium size mixing bowl, set aside

Step two: make a "breading" with:
2 cups all purpose flour
1 cup corn meal mix
to taste: salt, pepper, chili powder, lawry's season salt.

Mix ingredients together until incorporated.

Step three:

Rinse fish then dip into the egg wash, covering both sides. Then, place into the dry ingredients and again, cover both sides well. Once completed, place into hot frying pan with your favorite fying oil (vegetable, peanut or olive) Turn fish once. Cooking time varies based on the size of the filet. Usually takes me about 4 to 6 minutes per side.

Here's how I made mine at my restaurant. Get a pan of flour for dredging. In a separate bowl put 1 cup of flour and one 12 oz. beer. Dredge the partially thawed fillets in flour, then dip in the batter and deep-fry. The coating should turn out light and fluffy.

At home you can season both the batter and flour with Cajun, pepper, cumin, whatever you feel like.

In fact, I'm frying fish tonight.

• 2 lb. walleye fillets
• 1/3 c. chopped green onion
• 1/4 lb. mushrooms, sliced (1 cup)
• 1 tsp. salt
• 1/4 tsp. fresh ground white pepper
• 1 tsp. leaf marjoram, crumbled
• 2 Tbsp. dry white wine
• 2 tsp. lemon juice
• 1/4 c. shredded Monterey Jack cheese or mild Cheddar
• 1/4 c. fresh bread crumbs
• 1/2 c. (1 stick) butter or margarine, melted
• 2 Tbsp. chopped fresh parsley

BBQ is always best to me. If you pan fry (use your favorites seasonings on outside) and don't move the fish in the pan unless you are ready to turn it over....even if it sticks - if you cook side one properly you'll have a very nicely lightly cruchy exterior with a moist interior.
