I like them really soft and I put them in maybe 10minutes ago and they are still pretty hard. How long am I suppose to keep them on the stove for?

It is between 10 and 15 min. depends on the size and quality. are they fresh? keep on poking with the fork.

Depends on the size and thickness
Fresh carrots take at least 30 minutes
Put a lid on the pan. cook low heat.
The lid will keep the steam in and cook them quicker and the water won't boil away as fast

This is a common problem. Good that you took the meat out thats about all you can do and maybe jack up the heat a little. For future roasts try precooking the carrot bake covered, steam, or simmer.

Next time, go for twenty minutes on medium heat.
If they're too hard for you, and you're constantly cooking them for ten minutes, it's time to cook 'em longer!

Try steaming them in a little chicken broth for about 7 minutes, they should be fork tender and very tasty.
