A quiche is simply a savory, single crust, custard-based pie. Eggs, milk or cream, seasonings all mixed and poured over whatever you wish in a pie crust. Green chiles and cheddar, or spinach and swiss or ham and cheddar, etc, etc.

"Ham and Cheese Quiche"
Pastry for a 9" quiche
1/2 cup (2 oz.) shredded Swiss cheese
1 cup (4 oz.) shredded sharp Cheddar cheese; divided
2 tbsp. all-purpose flour; divided
1/2 cup diced cooked ham
2 tbsp. honey mustard
5 eggs; beaten
1 1/4 cups half-and-half
1/4 cup chopped green onions (scallions)
1/4 tsp. salt
Line a 9" quiche dish with pastry; trim excess pastry around edges. Prick bottom and sides of pastry with a fork. Bake at 400* - 5 minutes; remove from oven, and gently prick with a fork. Bake an additional 5 minutes.
Combine Swiss cheese, 1/2 cup of the Cheddar, and 1 tbsp. of the flour; toss gently. Sprinkle evenly in pastry shell. Combine ham and honey mustard; toss gently to coat. Spoon ham mixture over cheese.
Combine eggs, half-and-half, green onions, remaining 1 tbsp. flour and salt; stir well. Pour mixture into pastry shell; top with remaining 1/2 cup Cheddar. Bake at 350* for 40-45 minutes or until set. Let stand 10 minutes before serving.

Pâte Brisée Recipe
INGREDIENTS:
1 recipe pate brisee or refrigerated pie crust, blind baked (see instructions below)
2 Tablespoons minced shallots
3 Tablespoons butter
1/4 lb. cooked, (fresh or canned) shrimp, crab or lobster, diced
2 Tablespoons dry white vermouth
salt and pepper
3 eggs
1 cup cream
1 Tablespoons tomato paste
1/4 cup grated Gruyère cheese
PREPARATION:
Preheat oven to 350F.
1. Line a 9-inch tart pan with a removable bottom with the pie crust. Line the inside of the crust with crumbled wax paper or parchment paper and fill with dried beans.
Place in oven and bake about 12-15 minutes or until partially done. Remove the beans and the paper and bake an additional 2-3 minutes to dry out the bottom.
Preheat oven to 375F to bake the quiche.
2. Melt the butter in a skillet. Add the shallots and sauté unto soft but not colored.
3. Add the seafood and stir for about 2 minutes.
4. Add the vermouth, raise the heat and allow to boil for a minute. Remove the skillet from the heat and cool the mixture slightly.
5. Beat the eggs, cream and tomato paste together. Season with salt and pepper.
6. Gradually stir in the shellfish mixture. Taste and season again.
7. Pour the mixture into the pastry shell. Sprinkle with the cheese and bake for 25 to 30 minutes or until the quiche is puffed and browned.
To serve:
Allow to cool slightly. Cut into wedges and serve warm.
Quiche au Brie (ou Camembert)
A cheese quiche made with either Brie or Camembert cheese.
INGREDIENTS:
1 recipe pate brisee or refrigerated pie crust, blind baked (see instructions below)
3 oz. (rind removed) Brie or Camembert cheese
6 oz. cream cheese
2 Tablespoons softened butter
3 Tablespoons cream
2 eggs
1/2 Tablespoons minced chives
salt, white pepper and cayenne pepper to taste
PREPARATION:
Preheat oven to 350F.
1. Line a 9-inch tart pan with a removable bottom with the pie crust. Line the inside of the crust with crumbled wax paper or parchment paper and fill with dried beans.
Place in oven and bake about 12-15 minutes or until partially done. Remove the beans and the paper and bake an additional 2-3 minutes to dry out the bottom.
Preheat oven to 375F to bake the quiche.
2. Using a fork, blend the cheese with the butter and cream.
3. Beat in the eggs.
4. Force this mixture through a sieve to remove any lumps.
5. Stir in the chives. Taste and season with the salt, pepper and cayenne.
6. Pour into the pastry, place the pan on a baking sheet and bake for 25 to 30 minutes or until the quiche is puffed and browned.
