I would adopt a dog from the pound, if you had an older dog they are already housebroken, trained, and many have very good manners in homes. It would help the dog since many older dogs do not get adopted and you would have peace of mind that your dog would be safe in your home and would probably sleep while you were at work but awaiting you to come home for a walk, many are also very gentle with kids, being older. I have a schnoodle and she is wonderfully well mannered and so sweet with younger children, we have never had a problem with her in our house and they are very easily trained. You should try to find a schnoodle.

I'd recommend the Shiba Inu IF you get it as a puppy and socialize it with your children. But I am concerned about how long it will be in a crate. If it is possible, there are dog sitter services (check references) and sometimes people in the neighborhood who can regularly take your dog out for a break at lunch time, giving the dog some play time and an extra potty break.
Crates are great for training, but keeping a dog in a crate for over nine hrs a day is too long. A puppy will use the bathroom in it and the crate will be a disaster if left for that long. A puppy can only be expected to hold their bladder for one hr. per month old, on average.
Hopefully you could utilize a crate to housebreak and keep the dog out of trouble during its puppy stage, but I wouldn't recommend having a dog if you aren't able to get the help to provide plenty of breaks while training or if this is something you have in mind on a permanent basis.
I am not saying this is what you are suggesting, just from what you have written, these are some thoughts on the subject.

I know a person that has a Chihuahua and they have two kids(boy and girl) the girl is 12 and the boy is 9. They keep the dog in its crate and they go to work at 3:00 then the girl takes the dog out at 6:00 and he stays in his crate until they get home at 3:20. The dog is very gentle and loves to sit on people's laps.

You can check out information regarding all of the breeds you've listed in your question, as well as other breeds that you haven't considered, simply by accessing the American Kennel Club's website at www.akc.org They will give information regarding breed standards (height, weight, appearance, temperament, exercise requirements, residence requirements, etc). I found when I was looking for a breed that would fit my lifestyle, this was the website that helped me the most. It's chock full of information that's easy to access, easy to understand and really made my decision so much easier. And, I've not regretted my choide EVER. I went with the miniature American Eskimo. They're a gorgeous breed, exceptionally smart, great temperament, which means they're great with kids, adults, other animals, including cats, other dogs, rabbits, etc., they're a hearty breed, which means they most likely won't jump off the couch and break a leg, and because they're mini's, they don't need a huge back yard - we have a backyard that's only about 1/4 acre but because it's completely fenced in, they can run around as much as they like. Remember, a dog is a long-term committment and this is a very serious decision to make. You want to make sure that whatever breed you choose will fit your lifestyle for years to come. It's great that you're thinking about these things and looking for the answers to help you come to a decision. Good luck and I hope this helps!

Rat Terriers are very sweet. But think:

Would you like to be crated up for 9 and a half hours EACH DAY with no playing time or anything? Getting a dog would not be a good choice if this is the case. Maybe a dog sitter or relative could check on it occasionally, just to get him out and feel loved.

Even if that, he should be with his regular owners regularly. It's not fair to him.

Rat Terrier
Boston Terrier

Sheba's are almost wolf like in behavior, nervous, leary etc-although I have seen some good with kids.
Chi's are just too small and I have seen them broken due to an accidental injury by a kid, devastating! Nervousness encompass these guys too.
Min Pins are fun, not too bad. But in my personal experience I could not train one to pee outside for the life of me!

Now, have you considered the "Nanny Dog" suitable with children, one of only two breeds described by the AKC as such? Small, tough, and comes in all colors? I know when you see them in a picture, they look huge, but 14"-16" at the shoulders. Sure they look like a pitbull, but do not be mistakes, these are a very popular dog in England for families. I say get a pug....great with kids, short hair (although they shed), hardly bark at all, all and all a great dog.
Crate training is so smart my Pug does fine in her crate and has no problem with it she goes right in everyday. When she turned one I started letting her stay out at night and she sleeps beside me all night, we go potty once a night when I go. Pugs are a great companion.
