Because canola oil is thicker then grape seed oil. For a healthy choice of oil that does not stick to pan try peanut oil or olive oil.

Logically, I would say that since grapes aren't very oily, their oil wouldn't be either. I just mean that it's probably not the slipperiest oil. Kind of like 90w gear oil in your car's engine would make it run sluggishly.

It must have to do with the burning temperatures of each. If you're using a cookie sheet, you might want to also try parchment paper. That helps with some recipes in preventing things from sticking.

Grape seed oil has a much lower smoke temperature, perhaps you are cooking with too much eat.
