Sugar Cookies

3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 tablespoon milk
Powdered sugar, for rolling out dough

Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.
Preheat oven to 375 degrees F.

Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

OLGA's SUGAR COOKIES:

1/2 cup butter (softened)
1/2 cup shortening
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cream of tartar

In a large bowl, cream butter, shortening and sugar. Add eggs and vanilla extract until light and fluffy. Sift dry ingredients together and add to butter mixture until well blended. Chill dough for 1 to 2 hours.

On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with cookie cutters. Place on greased baking sheets or parchment paper. Sprinkle with colored sugar or leave plain to frost later.

Bake at 350 degrees for 5 to10 minutes or until lightly browned. Cool on wire racks.

Almond Biscuits

Ingredients

50g (2 oz) soft vegetable margarine
25g (1 oz) caster sugar
75g (3 oz) plain flour
25g (1 oz) ground almonds

Blend margarine with sugar.
Stir in the flour and almonds to form a dough.
Roll out the dough and cut out shapes with a cutter.
B ake for about 8 minutes at 200ºC/400ºF until pale brown.
Cool on a cooling rack

This one seems to get rave reviews for me:

1/2 pound of butter
1 cup sugar
3 cups flour
3 tsp baking powder
1/2 tsp salt
2 egg yolks, stirred
6 tbsp milk
1 tsp vanilla

Cream butter and sugar, add stirred egg yolks and mix well. Add vanilla to milk in separate small bowl. Combine dry ingredients in another bowl, add to butter mixture alternately with vanilla and milk mixture. Divide into two balls, refridgerate till slightly firm. Roll out and cut as desired, bake at 325F for 8-10 minutes, or until barely golden. Do not overbake. If baking on a dark non-stick pan, reduce heat to 300F.
