Intersting question. I'd probably vote for ultra-orthodox Judaism. Dietary restrictions, ritual rules, Judaic law...it can get fairly complex.

I'd vote for Hinduism. It features a polytheism with some pretty uncomforting dieties. There are also numerous sacred texts from different eras. And it features some very complex rules, practices and customs.
To be fair, I am a American with no Hindu friends, so maybe there's more ignorance than insight in this answer, but have you tried reading the Bagavhad Gita?

It's like asking which one is the most complicated language. On the surface you might be able to answer that question, but once you get deeper into them and see all the different ways you can deal with religious issues, they are all infinitely complex and are changing and adding to that complexity every day.

when you were not raised with them mostly they seem to have ALL sorts of strange rituals and customs and you have no clue WHY they do those things. Probably good reasons or at least ritualistic reasons. Just strange and unfamiliar to me.
I would expect that anything that lasts thousands of years would have some REASONS for it. I hope so.

Hmmmm,,
Christians have like 11 rules, the rest is in interpretation.
For Catholics, all of our answers are right in a book in black and white, it is the Catechism of the Catholic Church.
Now, knowing the rules is not always the same as keeping them.....
Depends on your perspective I guess!
