Last Christmas we made hand dipped chocolates which were a huge hit! We are doing it again this year, and I'm looking for ideas of things that would be yummy to combine with chocolate. We are not thinking regular fruit because these things need to last for gifting.

We made chocolate covered potato chips, pretzels, homemade marshmallows, oreos, nutter butters, rice crispy treats.

We also made toffee, sugar roasted walnuts and pecans and peanut brittle. And homemade cocoa mix.
Any other ideas to add to our list? Thanks in advance.

Candied fruits, like candied orange peels. I LOVE chocolate haystacks, so maybe you could mix some sweetened coconut flakes with the chocolate and let them set up in little mounds, and then ship them to me. (haha!) Chocolate dipped florentine cookies are great, chcolate nut clusters, chcolate covered nougat for extra indulgence, or maybe you could ene try some kind of Mexican hot chocltae inspired spicy chocolate. I don't necessarily mean spicy hot (although that sounds yummy) but chocolate with savory spices.

Hmm, you seem to have covered most of the basics. Perhaps you could try cookies (like homemade chocolate chip or oatmeal), you could dip different kinds of chocolate, like idp white chocolate into milk chocolate and vice versa, strawberries are always classic, and you could do cherries too, maybe dried fruit like rasins, cherries, banana chips, etc. also maybe dipping little cakes (like the christmas tree cakes made by little debbie) with frosting between two thin layers and cut into christmas shapes, then you can decorate them w/ different color chocolate for decorations.

FORTUNE COOKIES!! You can order fortune cookies online to say pretty much anything you want on the inside. You can dip those in chocolate and wish your family and friends a Merry Christmas as they read their fortune.
