Bailey's Irish Cream Fruit Dip
This is a delicious twist on fruit dip. Different from the regular cream cheese based dips, this is lighter and creamier. Serve with fresh fruit slices and squares of pound cake or angel food cake.
1 (6 ounce) package instant vanilla pudding
1 cup milk
1/2 cup Bailey's Irish Cream
1 (8 ounce) container Cool Whip
Whip all ingredients together.
Can be served immediately or chilled.
OR Bailey's Irish Cream Bread Pudding
4 1/2 slices French bread, thick,cut into 1 inch cubes (or substitute Irish soda bread recipe #53895)
2 tablespoons butter
1 teaspoon vanilla extract
1 cup scalded milk
1 pinch ground nutmeg
4 eggs, beaten
1 tablespoon dark brown sugar
1/2 cup white sugar
1/2 cup raisins
1 cup bailey irish cream
Preheat oven to 300 degrees.
Butter one 2-quart casserole dish.
Prepare a water bath for the 2-quart casserole dish by placing a larger dish with water in the oven.
Place bread cubes in the 2-quart casserole dish.
Beat together the eggs, sugar, and vanilla.
Slowly add the scalded milk and Bailey's Irish Cream.
Pour over the bread.
If desired, sprinkle with brown sugar, nutmeg, and raisins.
Place the casserole in the water bath and bake for 50 to 60 minutes or until a knife inserted in the middle comes out clean.
Server either hot or chilled.
When You take the pudding out of the oven, if the pudding seems to be dry, you can sprinkle some Bailey's over the top to help make it moist

Bailey's does not go in pudding.
Bailey is pretty much for drinking. Maybe make an egg nog pie with the stuff.

3 tbsp. quick-cooking tapioca
1/3 c. sugar
2 lg. egg whites, lightly beaten
2 3/4 c. skim milk
3/4 tsp. vanilla extract
Pinch ground nutmeg
GARNISH
1/4 c. slivered almonds, toasted
Serves 4. About 2/3 cup per serving. In a 2-quart saucepan, mix tapioca, sugar, egg whites and milk and let stand 5 minutes. Bring mixture just to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and nutmeg. Cover with plastic wrap and let stand at room temperature 20 minutes. Stir and pour into individual serving dishes. Garnish with 1 tablespoon slivered almonds per serving. Serve warm or chilled

Dont really know about puddings but have you tried baileys in black coffee? It is to die for and warms your throat too!
