I know it sounds weird, but does anyone know a recipe for a cheesecake without a crust? Or some kind of cheesecake thing, ya know.

Our family has this cheesecake every Christmas. It is one of my favorites. Very light and has no crust.
1lb. Ricatto Cheese
2- 8 oz. pkgs. cream cheese
6 eggs
1- 1/2 cups sugar
6 Tbsp. flour
2 tsp. vanilla
grated lemon rind
1 pint sour cream

Beat in order given. Pour into a 9-inch well buttered spring form pan.
Bake at 350 degrees for 1 hour. Turn oven off and leave
cake in the oven an additional hour.

You can use any of the instant cheesecake kits and skip the crust or mix it in. Chill it in the mixing bowl or in pudding cups, or freeze it in popsicle molds on sticks.
If you bake one, use a greased, lightly floured cake pan. The heavy cheesecake recipe will work better than a fluffy, light french cheesecake. If you quickly remove it from the pan onto a larger baking dish, you can probably brown the other sides or apply a glaze before the oven cools down.

I can make a cheesecake without the cruset by jsut simply covering the filling with milk choloclate, chololate chips, cookie batter, cake batter, pancake batter, et cetra. The list goes on an d on. If you want to make a cheesecake without the crust, USE YOUR IMAGINATION, for that is what cooking is all about.

the crust is the best part. My wife just uses crushed Arnotts Scotch Finger Biscuits and it works great. Highly recommended.
