Macaroni and cheese - it is a typical southern US staple which is often paired with fried chicken - so why not with fried fish? You can make it at home with any small pasta... here's an easy recipe:

EASY BAKE MACARONI & CHEESE

1 (7 oz.) box of macaroni, uncooked
Salt & pepper
1 tbsp. melted butter
1 1/2 lb. grated cheese of choice (cheddar, jack, mozzerrella, etc...)

In 9 x 13 inch cake pan, mix all ingredients well. Bake at 350 degrees for 1 hour.

Make a veggie - and you're good to go...

I'm a fan of a nice buttered noodle.. Use an assortment of the noodles (or just one kind) and just butter them up.. You can also sprinkle a little bit of grated cheese on them. It's very simple.. but a good touch to what you're making.

I make garlic and parmesian noodles for something like that. Its quick and you can make it with any kind of noodle.

Add a couple table spoons of butter to a bowl of hot noodles, or some olive oil, add some garlic salt to taste, and some grated parmesian until ti cheeses up nice.

I agree, any pasta will be fine. I think buttered spaghetti with some herbs would be great. the tomato bake sounds great too.

Here in Georgia we eat garlic cheese grits with our fried fish. They would go well with the tomatoes as well! Paula Deen has a wonderful recipe on her website. Enjoy!

Merry Christmas!

Pasta with a white sauce should work. Rice is another option.

BTW, you and Dan Quayle spell tomato the same way. :)
