My niece from my godfathers side is going to be baptized this week, it's so awesome.

You absolutely can, and it's a road that I once considered. I suggest that you go out and pick up the book "The Orthodox Church" by Timothy (Kallistos) Ware, an Orthodox bishop, scholar, and convert. It forms a great introduction to Orthodox Christian thought, practice, and history. If you get the opportunity, talk to the priest who is baptizing your niece or arrange to meet up with him later. He'll let you know more.

Yes you can, but why would you want to join a church that is in schism from the true church founded by Jesus Christ? I have great respect for the Orthodox, but the truth is, moving from the Catholic Church to the Orthodox Church would be a step down.

Certainly, there isn't really much of a difference between them. Both are valid apostolic churches, both teach the apostolic message as originally proclaimed. It isn't much of a conversion, they differ primarily in externalities.
