We are talking about the most common term for the SPORT - not literally 1 (or more than 1) horse racing !!

Google = 234,000 for "Corse Dei Cavalli" =
Google = 40,300 for "corsa di cavalli"

So it would appear Corse dei Cavalli is the common usage in Italian?

Valentina's answer is correct since the translation of Horse racing is "corsa di cavalli" (singular) and not "corse di cavalli" in the plural mode that retranslated into English would be "Horse racings", Same story for "corsa di levrieri" and not "corse di levrieri". As to yr third question as far as I know in Italy Horse racings are rather popular (but not so much) while "Greyhound racings" were just a bit popular in the past (better to say that a few people knew they were existing) while nowadays have practically disappeared-
