My sister, my brother and i are giving our parents a treat by cooking them christmas dinner!
I need to know any good ideas for a starter, main course and dessert!
They neeed to be eeeasy to make, as we ARE NOT proffesional cooks, but also something original and not obvious.
Please help, and please could you provide the resepie!!!

Cornish Hens are elegant and easy. Buy one per person. Serve with rice pilaf, wild rice or instant couscous (boxed is easy). Place them on a pretty serving platter over parsley or lettuce & surround them with canned mandarin oranges. For dessert you could purchase a ready made yule log cake. Make a nice salad, dinner rolls, coffee or tea, an appetizer (if you like) and white wine. Happy Holidays.

Here's an all-in-one dish.

Rosemary-Lemon Cornish Hens w Roasted Potatoes & Maple Squash
Serving Size : 2

You can easily vary this recipe by using thyme in place of rosemary or sprinkling ground red pepper and garlic powder over the potatoes.

2 teaspoons crushed dried rosemary
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
2 (1 1/4-pound) Cornish hens
1/2 lemon, halved and divided
2 cups cubed Yukon gold or red potato
2 teaspoons olive oil

Preheat oven to 375°. Combine crushed dried rosemary, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Remove and discard giblets from hens. Rinse hens with cold water; pat dry. Remove skin; trim excess fat.

Working with 1 hen at a time, place 1 lemon piece in the cavity of hen; tie ends of legs together with twine. Lift wing tips up and over back; tuck under hen. Repeat procedure with remaining hen and lemon piece. Rub hens with rosemary mixture. Place hens, breast sides up, on a broiler pan coated with cooking spray.

Toss potato with oil; sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Arrange the potato around hens. Insert a meat thermometer into meaty part of a thigh, making sure not to touch bone. Bake at 375° for 1 hour or until thermometer registers 180°. Remove twine. Yield: 2 servings (serving size: 1 hen and about 3/4 cup potatoes)

Maple-Glazed Winter Squash
If you are serving the squash with the Rosemary-Lemon Cornish Hens with Roasted Potatoes, you can cook the squash in the same roasting pan. Make sure to arrange the squash on the front of the pan so you can easily brush it with the syrup mixture when you open the oven door.

1 (1 3/4-pound) butternut squash
Cooking spray
4 teaspoons maple syrup, divided
1 teaspoon butter, divided

Preheat oven to 375°. Cut squash 1 inch above bulb; save stem section for another use. Cut bulb in half lengthwise. Remove and discard seeds and membranes. Place squash halves, cut sides up, on a broiler pan; place 2 teaspoons maple syrup and 1/2 teaspoon butter in each squash half. Bake at 375° for 1 hour or until the squash is tender, brushing cut sides with syrup mixture every 20 minutes. Yield: 2 servings (serving size: 1 squash half)

If you like salmon, here's an easy all-in-one dish.


Oven-Roasted Salmon, Asparagus and New Potatoes
Serving Size : 4

1 pound small new potatoes, halved
2 Tbsp olive oil
1/2 pound asparagus, trimmed and sliced on the diagonal, 1-inch long pieces
1 Tbsp chopped fresh dill
1 strip of lemon zest
2 garlic cloves, chopped
salt & freshly ground pepper, to taste
2 salmon steaks (10 oz each), cut about 1-inch thick
1 lemon cut into wedges

Preheat oven to 400F. In a large, shallow baking dish coat potatoes with olive oil. Arrange potatoes, cut side down, in the baking dish and roast for 10-12 minutes, until the potatoes begin to brown on the bottom. Turn the potatoes over and roast another 10 minutes until browned on top. Remove dish from the oven.

Toss asparagus with chopped dill, lemon zest, garlic, salt and season with pepper. Add asparagus mixture to the potatoes and stir to combine.

Push vegetables to the side of the dish to make room for the salmon steaks. Return the baking dish to oven and roast the salmon and asparagus 10-12 minutes, or until fish is just cooked through.

Remove the skin and center bones, and arrange on individual plates before serving. Garnish with fresh dill and lemon wedges.

What about a nice Italian style dinner? You can have a salad and garlic bread to start(buy bagged salad and add some tomatoes, mushrooms, whatever your favorite toppings are, and make garlic bread or buy a nice loaf at the bakery). Make Lasagna for the main course. This is actually pretty easy. Most noodles have the recipe on the back of the box--I like making the no boil noodles version. Or, have some "fresh" ravioli(found in the dairy section) with a nice sauce. For dessert, serve an elegant cheesecake...buy one already made, or look online for a recipe. Or, some Tiramisu.

There are hundreds of them and you can search by ingredient, holiday, or even the type of dish, i.e. side dish, appetizer, entree, etc. I have been using this site for years, and it has yet to disappoint me. When people make the dishes, many go back to the site to rate the recipes, and this helps because you are hearing it straight from people that have made the actual recipe. They give suggestions on how the recipe could be changed to suit different tastes sometimes. Another helpful item is the time frames given on each recipe, cook time, preparation time, etc, and that always helps when you are on a time budget or want to be able to plan ahead, or are wanting to keep your recipes simple.
