We were given an idea to use a posterboard as visuals, but I want to stand out. Any ideas?

you can show the process of carbs being converted to energy....you could illustrate the important parts of the body that require fat....bone marrow, and the brain etc. You can show how protein is never converted to anything else, unlike carbs and fats.

Draw a cross section of a human body...torso to head....and show the digestive system. Talk about the areas that these are digested in and by what enzymes associated with the digestive system or accessory organs. You can have stick on equations to to add to the poster board as you show the combination and breakdown process to the useable chemical that is used by the body at the cellular level as you present it.
OR...set up simple experiments to show the presence of these organic nutrients in common everyday foods. (you may need the teacher to gather the chemicals/reagents needed to carry out these simple tests.) Good luck...I've always liked showy presentations in my science/biology labs.

you should do it on obesity, because you can get so much information on the internet!! and so many statistics because it's been a huge growing epidemic in the u.s. for a visual you can find that picture of those obese little kids eating mcdonalds :( so sad !! it's a great topic because it's a serious health concern.
