There is no independent record of the Hebrews (or Israelites) as a people before the time of the Exodus. Nowhere in all of Egyptian history are they mentioned as a slave class or separate culture within Egypt. One theory suggests that the culture known as Israel arose from a group of Egyptian expatriates driven out after the reformation, when the monotheistic faith of Ankhenaten was repudiated in favor of the old polytheistic religion of ancient Egypt. These refugees joined wandering pastoral clans before settling (by force) in what is now called Israel and/or Palestine; most of the Old Testament stories before the Egyptian 'captivity' probably come from these peoples.
If this is the case, then the Hebrews may owe their religious origins to Egyptian roots.

Documented outside of Torah and other Judaic books no. According to us it was the faith of Abraham. Yes it was monotheistic. The Laws of Moses codified these beliefs.

The only document of it is in the book of Genesis. For the most part, Jews were started while in slavery. Abraham was the first Jew. He later moved into Egypt because one of his twelve sons was a ruler there (Joeseph), and because of the famine in the land. However there were people who believed in the same God before Abraham.

polytheistic. Remember when Moses was lreading his people out of Egypt and all that? Remember the statue of the golden calf that aaron let the people build to worship while moses was up on the mount? They used to worship idols.
