I love fruitcake! My grandma's homemade is my favorite, but since she passed away, I don't get it anymore. The Claxton's are pretty good! Merry Christmas!

My grandmother was one of 13 children , with the eventual offspring the family became quite huge. Someone gave a fruitcake to one of the relatives a lot of years ago. The next year THAT relative gave it to someone else. This fruitcake has been circulating the family for 27 years now, that I know of. If it's the same one I don't know, but it's definately a fruitcake.

I love my sisters home made :

Fruit Cake

Ingredients

400g self raising flour
100g margarine
200g sultanas
2 teaspoons mixed spice
300ml sweetened soya milk




Preheat the oven to gas mark 7.

Combine the flour, spice and margarine in a bowl and mix together with your fingers until it has a breadcrumb like consistancy.

Wash the sultanas in hot water to rehydrate them. Drain and allow to cool and then add to the mix. Stir with a spoon and add the soya milk 100ml at a time until you have a fairly runny mixture that is still sticking together.

Put into a pan that has been greased and put in the hot oven for 20 minutes.

Delicious served hot with soya cream.

If this cake isn't sweet enough you can substitute 100ml of the soya milk with 50ml of apple juice, or top it with 'butter' cream made by mixing margarine with sugar or sweetner. I also add food colouring to my butter cream if I'm making the cake with the children (although they seem to prefer the taste of the cake before it is cooked).

Love it...just can't usually affort the good ones! I recommend Collins Street Bakery fruitcakes. They are kinda pricy though but worth it! Happy Holidays!

Alton Brown's "Free Range Fruitcake" is quite tasty. I have two loaves "ripening" in my kitchen right now.

I've personally never tried it. Its just so taboo that anytime I even see it I'm immediatley turned off. Maybe one day I'll be brave and give it a chance.
