please help me on making a xmas dinner this s the first time im cooking for my family!!!

Plan ahead.

Write out a menu in advance that you all like, ensure you have everything to hand before you start, and give yourself plenty of time.

Best to prepare as much as possible the night before, example, washing and preparing vegetables ready for cooking, these can be stored in your fridge, not freezer, in water.

If possible, get your family involved, let them help you in the kitchen. Never try and do too much, keep it simple.

Practise makes perfect, so why not try cooking a mock up Christmas dinner next weekend. Your family will no doubt enjoy it, and it will give you confidence for the big day.

I've been cooking for my family now for several years, two meals a day, every day, 365 day's a year, and I love it.

It is also important to get used to cooking times, so everything is ready at the same time.

Just for your information, this year we are starting with prawn salad, then turkey and 5 vegetables, followed by apple pie and cream, all home made, nothing frozen or out of tins.

In our family the roast potates are always the most important thing :

Roast Potatoes

Ingredients

2 medium potatoes per person
garlic
sunflower oil
salt

Peel the potatoes and chop them in half. Put them in a saucepan and cover with boiling water. Bring back to the boil and simmer for 10 minutes.

Meanwhile preheat the oven to gas mark 7 or 200 degrees. Take a roasting pan and cover the bottom with a thick layer of sunflower oil. Put in the oven to warm up.

Once the potatoes are cooked drain. Toss them in the colander or gently rub them over with a fork to texture the outsides.

Take the hot oil out of the oven and carefully pour the potatoes into it. Use a spoon to cover them all in oil. Add 1 clove of garlic per person (peeled but not chopped) to flavour the oil and give the potatoes some flavour.

Cook for 1 hour (or longer if you like them really crispy). Every 15 minutes remove the pan from the oven and turn the potatoes over in the oil to make sure they get crispy all over.

Once they are cooked remove from the pan and lightly salt.

I think you should buy a turkey or ham from your local market or gourmet market that's already cooked-you would just have to reheat. Spend your time making the side dishes like
green bean casserole or a salad w/ cranberries and pecans,
you need a starchy dish like potatoes-mashed or augratin or
sweet potatoes or yams w/ marshmallows, stuffing (you can do it from scratch or buy Stove top stuffing and add items to make it
taste like scratch. You need dinner rolls.

Flowers or candles for centerpieces and Xmas music
(Check out your local library)
I would buy dessert also if you can't bake a cake or pie well.
Be sure to have lots of beverages for non-alcohol drinkers and drinker like hot cider, eggnog or punch and alcohol

Well this year its going to be 2 meals, becuase our tradition is we normally have bbq ribs & all the fixxens that go with it.

So, Im making bbq beef country ribs, corn on the cob, bbq baked beans, homemade coleslaw, homemade mac & cheese.

And: Pineapple glazed spiraled cut ham, real sweet potatoes candied, mashed potatoes, gravy, green bean casserole, stove top stuffing, cranberry sauce, minced meat pie (for my inlaws, this is a HORRIBLE pie), homemade apple dutch pie, homemade dinner rolls, homemade orange bread, deviled eggs, 4 diffrent kinds of homemade cookies, & homemade brownies, & a Christmas tree shapped cake too.

Start making and preparing some of your dinner the night before so you'll have less time being in the kitchen for the actual holiday. par boil the potatoes for 10 mins then add to a roasting tin with goose fat melted in it. grate some orange rind and roast on a high heat for 30 mins
