There are lots of 'add hot water & stir' meals out there ranging from soups to noodles. If you want to get real creative, put leftovers in a freezer bag, put it in a container and pour hot water on it and let it sit to heat your food up. It really works! It works really well with canned soup, premade pastas, casseroles, chicken breasts, just keep trying things. I work in the same similar situation that you have and resort to this all the time. Cold meals and salads gets old after a while.

the to go soup from progresso and campbell's soup...they're really good for lunch...u can buy the pre-made salad and get ur choice of dressing and have that for lunch.

if u really want noodles, u can buy the cups of noodles for like 69 cents and use ur hot water kettle.

i usually do the to go soup and salad or go to the local deli and have them cut about 3 dollars worth of ham, turkey, and swiss cheese for the week. get a loaf of bread and call it a day lol. the gourmet bread for sandwiches are also available.
