This is actually a huge debate amount nutritionists and scientists.
Canola oil has some pretty scary things said about it, do some reading on a general internet search. I actually cut canola oil out of my diet a number of years ago.

"Healthier" is a subjective term. I take the stance that varying what I eat is really important and I use different oils for different types of cooking. For everyday sauteeing, my preference is a good quality olive oil. For deep frying and stir frying, I like peanut oil because of the high smoking point. For heating tortillas, I like corn oil just like they use at my favoirte taqueria. For baking sweets like quick breads and muffins, I use nut oils like almond, hazelnut, walnut, etc. Each of these oils have thier own balance of nutrients as well as thier own flavor, which I take advantage of to broaden my nutrient base as well as enhance my cooking.

All fat and oils have the identical energy in step with tablespoon, roughly. Many persons say saturated fat are dangerous for you, and these kinds of are forged at room temperature. Butter is one among them. So is vegetable shortening. When cooking with oil, the primary factor to feel approximately is whether or not it breaks down at top temperatures, which will have bad results. Corn, canola, and EXTRA LIGHT olive oil all do not holiday down very so much at top temperatures, like deep frying temperatures. I might preclude vegetable oil, on the grounds that it's allowed to include cottonseed oil, which will have extra insecticides than different sorts of oil, considering that cotton isn't a meals. There are three sorts of olive oil to feel approximately. Regular olive oil is well for traditional pan-frying, further mild olive oil is well for deep frying. Extra virgin fees extra and has distinctive (traditional) flavors in it that disappear while you warmness the oil. You can fry with it, however you're throwing away the flavors you paid further for.

From http://www.spinalhealth.net/fats.html:

While Canola oil appears to be the best oil of the bunch due to its low amount of saturated fat and relatively high levels of poly and monounsaturated fats, the benefit of the high levels of monounsaturated fat in Olive oil outweigh the benefits of lower levels of saturated fat in the Canola oil. Another important factor which should be considered is the fact that Olive oil (as well as Peanut oil) does not breakdown into trans-fatty acids at high heat and can therefore be used in cooking. You should avoid cooking with oils other than Olive or Peanut oil.

Between the two canola oil is best. Olive oil is the only way to go though.

Canola oil is made from Genetically modified organisms. It's probably best to avoid eating it. (works great to lubricate meat slicers though) Vegetable oil is good to cook with (heat) but peanut oil is better. It is also best to save your olive oil for cold dishes or as a garnish added after cooking, it doesn't respond to heat well. Please never cook (heat) extra virgin oilve oil (it is such a waste) use a clearer (more yellow color than green) olive oil if you must heat it.

Canola is best, it is what I use always! You could also use the blend of canola and other oils, they are all light and healthy!
