Empanadas are a mexican pastry it's like a cookie and it has any kind of filling inside. They are delicious! mmmm Who is familiar with dem?

My family loves Empanadas. You can fill them with just about anything you can imagine. Listed below are some of my favorite fillings.

Empanada filling: #1
1 medium sized onion, chopped
3 cloves garlic, minced
4 tablespoons vegetable oil
2 tomatoes, peeled
2 cups cooked beef, chopped
1/2 cup beef stock
1/4 cup raisins
1 tsp vinegar
1/8 tsp ground cloves
1/8 tsp ground cumin
salt and pepper to taste

Saute onions and garlic in hot oil until translucent.
Add meat, sauté 5 more minutes. Stir in tomatoes, stock and remaining ingredients. Simmer 30 minutes. Fill your pastry, crimping edges. Bake at 375 degrees for 15-20 minutes.

Filling: #2
1 lb. browned ground beef or cooked shredded chicken (I prefer the chicken)
1/2 medium onion, diced
1/2 green bell pepper, diced
3 garlic cloves, crushed
1/8 c. chopped fresh cilantro
1/8 c. sliced green olives
salt and pepper to taste
1 tbsp. tomato paste
1 pkg. Goya Sazon with annato
Bake or fry empanadas.

FILLING: #3
1 (16 oz.) jar pineapple preserves
4 to 5 tbsp. cornstarch
1/2 c. sugar

Substitute apples instead of the pineapple preserves
add cinnamon and brown sugar instead of the white sugar.
Cook apples til softened. Stuff pastry and bake or fry.

And my Favorite, Filling: #4
1 block softened cream cheese
1/2 cup light brown sugar
1/2 cup chopped pecans or walnuts
1/2 tsp. cinnamon (optional)
Stuff pastry and either bake or fry.

*Another one using the cream cheese is to add crabmeat and diced shrimp. It is sooooo good!

Filling: #5
Pumpkin Filling: (These are awesome at Thanksgiving)
1 c. cooked mashed pumpkin
1/4 c. firmly packed light brown sugar
1/4 c. raisins
1/4 c. chopped nuts
1 tsp. pumpkin pie spice

2 tbsp. confectioners' sugar
1/2 tsp. ground cinnamon
In bowl stir together first five ingredients. Stuff pastry.
Fry, turning once, 5 to 7 minutes, or until golden. Drain on paper towels.

Mix sugar and cinnamon. Sprinkle over empanadas. Makes about 3 dozen.

I like empanadas with meat, specially those made in argentinian restaurants.

u can actually get em stuffed with other foods...i made ground beef and bell pepper stuffed ones for spanish class once ..but i prefer pastry filled
