At Christmas, I like a peppermint pie. Otherwise, I like a chocolate pie that you make by melting 6 bars of Hershey chocolate in a double boiler and then you fold in a tub of cool whip and pour it into a graham cracker crust and put it in the freezer.....yummy!

Vegetable Pie

Ingredients

1 medium potato
1 carrot
cabbage
1 onion
broccoli
vegetable stock
olive oil
vegan puff or short pastry
soya milk
salt
pepper

Peel, chop and fry the onion in a little oil until soft. Peel and chop the carrot and then add to the onions. Peel and chop the potato and add to the mixture. Chop some broccoli and cabbage and add. Fry all the vegetables until they start to colour. Pour over enough vegetable stock to cover the vegetables and boil for 20 minutes. While the vegetables are boiling roll out the pastry.

When the vegetables have finished pour them and the stock into an ovenproof dish and cover with the pastry. Brush the top of the pastry with soya milk. Bake in a moderate oven until the pastry is cooked through and browned on top.

Millionaire Pie. Yummy!
Millionaire Pie
Delicious any time, Millionaire Pie is especially prized by the summer cook who doesn't want to heat up the kitchen.
8 ounces cream cheese, softened
1/2 cup sugar
8-ounce can of crushed pineapple, undrained
1 cup grated coconut
1 cup chopped pecans
8-ounce carton of whipped topping, thawed (OR 2 cups whipping cream, whipped and sweetened with 3 tablespoons of sugar
1 prepared 9-inch pastry shell
Cream together the softened cream cheese and the sugar with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed.
Stir into the cream cheese mixture the crushed pineapple, coconut and pecans, and mix well.

Carefully fold in half of the whipped topping until filling is blended well. Reserve remaining half for top (see below).

Pile filling into a prepared pie shell, and chill for several hours.

Note: Millionaire Pie can be garnished with a dollop of the whipped topping when served, or you can spread the remaining half of the topping over the whole pie and finish with a sprinkling of chopped pecans. A third alternative is to fold both cups of whipped topping into the filling; this works quite well and makes for an even lighter texture, but allow more chilling time before serving if you go this route.

Big fan of Blueberry Pie, but my favorite is real Florida Key Lime pie. Made with real key limes, not the green filling crap. Real Key Lime pie sould be a pale yellow color. Just a small dab of whipped cream. Yup, that's the one for me.

in the summer I love raspberry rhubarb pie with vanilla ice cream
in the winter I love pecan pie topped with a chocolate ganache and whipped cream but pumpkin is a must have at Thanksgiving
