Sweet potatoes with orange marmalade would be good. Instead of mashed potatoes have a rice dish. Rice-A-Roni makes a wild rice mix that is great. Have a fruit salad made with either fresh or canned fruit covered in a sour cream dressing (sour cream and sugar to taste - cinnamon, if you like it). Steamed broccoli with mayo, rolls and a relish tray (celery, carrots, pickles, olives). Everything here is simple and easy to prepare. Don't want to wear yourself out in the kitchen and have no energy to enjoy the holiday with your family.

What about a quiche? You can prepare in advance and freeze, or keep it in the fridge for 24 hours and reheat in the oven before serving.
Smoked salmon and creamed spinach quiche
1 pack pastry
1 pack smoked salmon, cut into strips
1 pack frozen creamed spinach, defrosted
1/4 cup light cream
2 eggs, beaten
salt and pepper with a very light hand
Preheat the oven to 375 F. Line a shallow pie dish with pastry. Lay the salmon strips at the bottom and the creamed spinach on top. Mix the eggs and light cream and fill the pastry case. You don't want to fill it more than 2/3. Bake in the middle of the oven -on top of a baking sheet, just in case there are spillovers- for 30 to 40 minutes.
I f you follow a similar procedure but:
* using plain frozen spinach and sauteed red bell pepper strips and 8 oz ricotta cheese + 1/4 cup light cream + 2 large eggs beaten for the filling.
* then get a star shaped mold, arrange the spinach in the shape of small balls and the red pepper strips in the middle.
You will have a very festive spinach, ricotta and bell pepper tart with all the Christmas colors.
You can use filo pastry -baking only for 20 to 25 minutes and it will be even more elegant.

We eat ham on Sunday's once a month or so.
Warm Potato Salad:
6 white or Yukon gold potatoes (3 pounds)
3 large eggs
1/2 Vidalia onion, peeled and finely chopped
1/4 cup chopped pimento
3 tablespoons sweet pickle relish
1/2 cup spicy brown mustard
1/2 cup mayonnaise
Salt and freshly ground pepper
1 teaspoon paprika
Peel the potatoes and cut them into 1 1/2-inch chunks. Put the potatoes in a pot and add water to cover them by about 2 inches. Salt the water generously. Cover the pot and set it over high heat. Bring the water to a boil, then add the eggs. Reduce the heat to a brisk simmer and cook, covered, until the potatoes can just be pierced by a fork, about 15 minutes.
With a slotted spoon, remove the eggs from the pot and set them aside. Drain the potatoes and place them in a large bowl. Rinse the eggs under cold running water until cool enough to handle. Peel and chop 2 of the eggs and add them to the potatoes. Add the onion, pimento, and relish to the potatoes.
In a small bowl, mix together the mayonnaise and mustard. Spoon over the potato salad, season with salt and pepper, and mix gently.
Peel the remaining egg and slice it, placing the slices on top of the potato salad. Sprinkle with the paprika.
Serve immediately while still warm.
Baked beans.
Apple Sause.
Slow Cooked Green Beans:
2 tablespoons extra-virgin olive oil
4 to 6 slices bacon, chopped
1 large onion, chopped
3 pounds fresh green beans
2 quarts chicken stock or water
Kosher salt and freshly ground black pepper
Heat a heavy bottomed pot over medium high heat. Add the olive oil, bacon, and onions and cook until the onion is soft, about 5 to 10 minutes. Stir in the green beans and chicken stock; season with salt and pepper. Reduce the heat to low, and cook the green beans until they are soft but not mushy, about 30 to 45 minutes. Taste and adjust seasoning.
and some good old Pillsbury Cresent rolls.

Glazed baby carrots are different, easy to make and good! Just put a few tablespoons of butter and an equal amount of brown sugar in a sautee pan. Cook over medium heat until both are melted and then add the already steamed baby carrots, toss the carrrots in the glaze, add some salt and pepper and you're ready to go! Also brussel sprouts sauteed in olive oil and garlic - easy and sooo tasty! Scalloped potato's always go good with ham, too!

I would go with scallopped potatoes you can get and excellent recpice at verybestbaking.com. This is the one I use all the time and it always gets gone, and my son who doesn't like this has 2nd's most of the time. No matter which recipe you follow you need to substitue Evaporated Milk for the milk. As far as a vegetable try some stewed tomatoes with it as there are so many things you can do with them also.

You could serve candied yams. My Grandfather liked mashed yams with butter and brown sugar. The mashed yams are easy and quick to make. I would assume that you are going to spike your ham with cloves and rings of pineapple and top with the red glaze that comes from the store.

How about a cheese, broccoli and rice casserole. Or that yummy cheesy hash brown casserole with the sour cream. I may make that myself. I love a cole slaw with a little bit of tang from horseradish. It goes great with ham.

green bean casserole, candied yams, of course mashed potoates, & gravy, homemade mac & cheese, dinner rolls, cranberry sauce. How about a relish tray.
My step mother&law is mad at us, becuase every year we have our own dinner, & everyone comes to us, becuase she plans this hugh meal, tell us a time to be there, & its not ever done til about 8-9pm. By then were all tired, mad, cranky. And its day wasted!
So when they come to our place, we always set a time, & thats when its done is at the time we say it is. Noone has to wait. Thats not fair to your guest. And it gives a really bad impression to everyone.
So I had to tell her just be mad, I dont care, but the problem is you sleep all day & put the turkey in when ever you feel like it.

My step-children live with us but they were at their moms for Thanksgiving this year so we had ours with them and our children last weekend. We made a couple of the traditional foods then I let them all get on the computer and find a simple recipe that they liked and then let them make it. It was a great dinner and now no one will be tired of all the holiday foods before Christmas.
