Not sure what it is, (I'm guessing it's pork,... a big piece) but my best bet would be to season it up really nice with lots of garlic, pepper, and seasoned salt and put it in a roasting bag in the oven until it's nice and tender. Enjoy.

Season it up and smoke it.

Or, you could toss it in a slow oven, covered in foil... but put it on a rack b/c it's pretty fatty adn you want the fat to drip away.
