You don't need a dehydrator, check this site:
http://www.bbc.co.uk/dna/h2g2/A963461 .

It says "You don't need to go out and buy a fancy machine - your oven will work fine. The only drawback with an oven (unless it's relatively new) is that it's hard to be precise with the temperature - depending on the food it should be anywhere from 35 - 63°C (95 - 145°F). The concept is still the same (as with a dehydrator), just a bit more fiddly. The important thing to remember is to keep the oven door open to let the heat escape, otherwise you will cook the food.

Much more information on the actual site!

Put pineapple slices on a cookie sheet and in a warm oven around 200 degrees until you get the right amount of dehydration. Also, you can do the same thing in a microwave at low power settings.

If you want to make dried pineapple slices...slice it first, set your oven on the lowest setting...crack the door with a ball of alum foil and let "bake" for 1-2 hours.
