Because chocolate, no matter how hot your milk or how much you stir it, will not completely dissolve. Chemically what happens with chocolate is when you heat it with milk, the flavouring and colour comes off the chocolate powder and the powder will sink to the bottom because it's not soluable. You never get the same amount of powder in the bottom as you put in because some of it does remain suspended in the liquid as you stir it and as you drink it.

The sugar is heavier than the liquid. The undissolved crystals sink to the bottom of the cup bringing heavier cocoa solids and oils with it. Hope that helps!

You must keep stiring, young one! Stir! Stir, untill you reach the bottom. In fact stir the drink every two inches that you drink! YEAH!!!

Ahhh, my friend you must first make a paste! A PASTE!!! Put the powder in, then the tiniest bit of milk. Keeeeep stiring! Keep adding little bits of milk and stiring. Don't add anymore powder after you've put milk in. It works!

if you mix it all up with an electric mixer it will just blast those bumps away! I have an electric hot chocolate mixer and it is brilliant... just add the chocolate and milk, and push the button, it mixes it all up and turns off when hot enough. maybe ask for one for Christmas!

you should heat the milk before adding it to your chocolate. It helps melt and blend it better.

I always add the powder once the water is in the mug and then stir it............
It seems to work..... :-/
