It depends. With some cheeses, it's perfectly acceptable to cut the mold off and eat the rest. Cereal just goes stale, but it's not harmful. Canned goods...DON'T CHANCE IT! Not unless you want to have a nasty case of botulism and spend a lot of time in the hospital.

The expiration date indicates when the food is at its freshest. If its past the date, but has been stored properly, it's still fine. Cheese past the date may grow mold, cereal past the date could be stale (not deadly to eat but not as good as fresh) and canned goods past the date are fine, as long as the can isn't bowed out at the top or bottom indicating bacterial activity. The ends of the can should be curved in towards each other. If not, toss it in the trash.

If you see no sign of deterioration it probably is okay. If it smells off dont eat it. If it tastes off dont eat it. The date is no magic number that tells when something will go bad, it is a date picked by the manufacturers to protect themselves.
In cans, besure the can is not dented, leaking or rusted.
Cheese is fine, it is aged. If you see mold, you can remove it. If the mold bothers you dont eat the cheese. Some cheese dries and gets a salt mark that is white, that is not mold.
If the cereal seems stale to you, dont use it, or use it is cooking somehow.

It would depend on the food. Cheese is good until it molds. When cereal goes past it's date, it's usually stale and tastes bad. Canned foods are still good, but the flavor will probably be diminished.

How long expired? You will know when the food is unedible....check for bubbles on top of the canned foods---cereal will be stale---I don't know that cheese ever gets old....
