I need a very good appitizer for Christmas! It is soon and i am running out of time!

Gosh, there are so many and you didn't specify what kind. Here are my favorites.

Cream Cheese Stuffed Mushrooms


1 8-oz. package cream cheese
1 t. horseradish mustard
1 t. dill seed
1/2 t. paprika
1 clove garlic, finely chopped
16-20 medium mushrooms, peeled
Preheat oven to 400 degrees. Remove stems from mushrooms by twisting and pulling. Put all the other ingredients in a bowl and mix thoroughly (we found that mixing by hand, although messy, did the job quite well). Place a heaping teaspoon or so of the cream cheese mixture onto the exposed bottom of each mushroom cap. Place mushrooms in a baking pan, cream cheese side up, with about 1/8-inch of water (to keep them moist) and bake for 10-20 minutes, or until the cream cheese is slightly browned. Remove mushrooms from water before serving.

Fried Veggies

Take different types of veggies, mushrooms, squash cut in strips both zucchini and yellow, broccoli, cauliflower, green tomatoes. Use your favorite batter, dip and fry. Delicious and soooooo easy. You can even buy the batter mixture in the stores that you just add water to. Serve with different types of dips.

Somked salmon makes an easy and delicious appetizer as long as it's good quality and served fresh and moist. Keep it covered and serve at room temperature (remove the smoked salmon from the fridge about 30 minutes before serving) and try these ideas to make it more festive.

* Arrange the salmon on individual plates but fold, roll or crinkle up the slices rather than laying them flat.

* Garnish with chives and sprinkle some freshly ground pepper. Serve with lemon wedges, or try lime, for squeezing over.

* Garnish with capers.

* Serve salmon with slices of brown bread or pumpernickel spread with herb or unsalted butter - the smoked salmon already has plenty of salt.

You could rustle an orange, spinach and fennel salad in about 15 minutes.

2 or 3 oranges,
1 bag of baby spinach leaves, washed
1 fennel bulb, trimmed, halved and very finely sliced
some black olives, like Kalamata olives
2 Tbs extra virgin olive oil
1/2 tsp balsamic vinegar
salt and pepper,
a pinch of sugar to counteract the vinegar is optional because balsamic vinegar should be pretty sweet

Cut, peel and ptih the oranges. Cut across into slices. Place in a bowl or a platter with the spinach and olives on top.

Mix the oil, vinegar and seasoning and drizzle over the salad right before serving.

You can prepare the salad up to an hour in advance and store in the fridge, adding the dressing last minute.

I prefer to start with a soup, like this cream of mushroom

I saw this on a cooking show the other day. Buy a tube of refrigerated breadsticks, separate them and cut them lengthwise into skinnier strips, bake those, then wrap with prosciutto. That's it!

I made a hummus with parsley oil for a dinner party once that was a total hit. I served that in a bread bowl. (recipe is on epicurious.com)

Another Christmas-y one is to take some cherry tomatoes, slice the very top off and hollow them out with a melonballer. Pipe garlic cheese or garlic cream cheese in them, and garnish with chives and a little shrimp on top.

Crushed candy canes, to yield 1 cup
2 pounds white chocolate
Peppermint flavorings, optional

Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

Cheese log, cheese dip, or spinach dip and crackers is always a good choice. The spinach dip is easy to make and usually goes over well. I don't have the recipe myself, but you can buy it in some grocery stores frozen and fresh. Honey roasted almonds, salted mixed nuts, fresh vegetables like celery, carrots, broccoli, cauliflower, with pretzel sticks or even melon balls. You might try Betty Crocker.com. They have a lot of recipes and may have what you are looking for. Good luck.

Well, what you should do is go to www.foodnetwork.com and search Christmas. You should come up with a couple pages of recipes. I am taking a Culinary Arts class right now, so you should serve something like truffles, or biscotti. Both are not that hard to make and are quite easy.

Try a cheese and cracker platter. 4 kinds of cheeses- and 3 types
of crackers.
cheese is cut into small cubes. Stick some tooth picks into them
and make sure the arrangement is nice looking.
The grocery stores will have ideas, and picture catalogs maybe.
the platter is a nice idea-because ppl wont fill up on that but have something to graze on during conversation.

Every ones favorite are the little barbecue meat balls. You can purchase the meatballs pre-made then put them in crock pot with enough of you favorite barbecue sauce to cover and cook for 3-4 hours before serving. I always skim off the excess fat with a spoon before serving. I also add little smokies too.

How about shrimp cocktail? You can buy the shrimp.. and make the cocktail sauce:

ketchup 1/4 cup
real horseradish 1 tbsp.
tabasco (use very little 2-3 drops)
2-3 drops lemon juice
1/2 tsp. worcheshire

depending on how spicy you want it, add more or less horseradish :-)
