What size cutting blades would be used when making Breakfast sausage, lincolnshire sausage and Cumberland sausage ?

Hmm, when I've made sausage, I've never needed a cutting blade. I just run the meat through the grinder usually with the plate with the smaller holes. Mix everything together and swap out the grinder for the attachment with the extruder and it's done.
Not sure where a cutting blade comes in to play.

that all depends on what you prefer. i always use coarse blades
