It is harder for you to turn her down. (it could be just a friendly dinner and why would you refuse that?--if she asked you to dinner it would be a date and you might not go) It could be a ruse to get you out with her and maybe then it could lead to more..(another date)
It sounds like she is interested in you but didn't want to take a chance on asking you for a date.
