"Homemade Pizza Supreme" - 2 pizzas ( 6 slices each)

1 (1/4 oz.) pkg. active dry yeast
2 cups warm water (110-115*)
3 tbsp. vegetable oil
1 1/2 tsp. salt
4 to 6 cups all-purpose flour
SAUCE:
2 (8 oz.) cans tomato sauce
1 1/2 tsp. grated onion
1 tsp. dried oregano
1/4 tsp. salt
1/8 tsp. pepper
TOPPINGS:
4 cups (16 oz.) shredded mozzarella cheese
4 oz. Canadian bacon; diced
1 (3 1/2 oz.) pkg. sliced pepperoni
1 medium sweet red pepper; sliced
1 medium green pepper; sliced
1 (2 1/4 oz.) can sliced olives; drained
1 cup chopped onion
1 cup grated Parmesan cheese
1/2 cup minced fresh basil

In large mixing bowl, dissolve yeast in warm water; add oil, salt and 2 cups of the flour. Beat on medium speed for 3 minutes. Stir in enough flour to form a soft dough. Turn onto floured surface; knead until smooth and elastic, about 6 to 8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest in a warm place for 10 minutes.
Combine sauce ingredients; set aside. Divide dough in half. On floured surface, roll each portion into a 13" circle. Transfer to two greased 12" pizza pans; build up edges slightly. Bake at 375* - 15 minutes or until lightly browned. Spread with sauce; sprinkle with toppings. Bake for 15-20 minutes or until cheese is melted.

You didn't mention what part of the pizza you didn't find tasty, so it's hard to troubleshoot your recipe or even give you a new one.

So, having said that, I would follow TopGun's recipe for the crust. Actually, it looks almost exactly like the one I use. Remember, it is YOUR pizza. You can add whatever you want to it, including the crust. I'd put some italian seasoning blend in the flour and viola! - seasoned crust. I've also used just rosemary and parmesan or garlic and basil. A seasoned crust can make a huge difference.

If you are using a canned pizza sauce, taste it first and then adjust the seasonings to your liking. If I'm feeling lazy, I use canned sauce, but usually end up adding a pinch of sugar, some red pepper flakes and extra garlic, basil and oregano. Dei Fratelli makes a good spaghetti sauce (but I don't care for their pizza sauce), and I've used that as a pizza sauce before. That's already fairly sweet, so I add onion, garlic, oregano, rosemary and basil along with my red pepper flakes. Heat and let flavors combine then use it on your pie.

Don't limit your sauces to just tomato-based, either. The garlic or white sauce so many pizza places brag about is just bottled ranch salad dressing loaded with fresh chopped garlic. At my friend's pizza place we used 13 oz of fresh garlic per gallon of ranch dressing. People loved it. Also consider using BBQ sauce (BBQ chicken pizza, BBQ bacon cheeseburger pizza) as a your pizza sauce. I also occasionally use ricotta cheese that's been mixed with herbs and garlic and spread that on my pizza for the sauce. Top with zucchini slices, artichoke hearts and mozzarella. Add fresh chopped tomatoes and green onions when it comes out of the oven. Very good!

Get creative. It's your house and your pizza, so just play with it until you find one you like. And keep notes! It's very frustrating to make something that knocks everyone's socks off and then forget how you did it!

Crust:
Bowl 1: 2 c flour
1 tsp salt

Bowl 2 : 1 c warm water
1 tbsp sugar
1 tbsp yeast

Let yeast get frothy. Add 2 Tbsp of olive oil to yeast mixture. Dump yeast mixture into the flour mixture. Knead until smooth and elastic, kneading in flour as needed.

Let rise for at least 20 minutes. Makes one 15" crust.

As for the rest of it, it's all to your taste. Enjoy experimenting until you find the taste for you!
