What ingredients can I double without altering taste or doubling all ingredients? I want more than 6-7 cups for party but not 12-14.
Make sense?

Taco Soup

1 lb. extra lean ground beef,
½ large onion (chopped),
1 can stewed tomatoes (undrained),
1 can tomato sauce (undrained),
1 can whole kernel corn (undrained),
2 cans pinto beans (undrained),
1 can Rotel Chili Tomatoes,
2 cups water,
1 packet mild taco seasoning,
1 packet Ranch dressing mix,

Brown beef and onion. Drain and rinse. Return to pot and add all other ingredients. Simmer for 30 minutes.

NOTE: Canned vegetables are the average 15 – 16 oz. Size.

Makes 6 to 7 cups

Try using 1 and 1/2 of everything. That way your taste stays pretty much the same. If you just increase some of the ingredients, then the taste will not be the same as the orginal recipe.

Or, you could make a double recipe, and save the unused portion for leftovers. You are going to use half a can of this or a half packet of that anyway, you might as well enjoy the soup later too.

Since the average size assumed by the recipe's creator is 15-16 oz, try to use the 24 oz sizes, but figuring out the 1/2 packet measurement of the taco seasoning & dressing mix will be tough.

I would simply double the recipe and freeze any leftovers.

The only ingredient you have on your list that wouldn't alter the taste is te ground beef. You can add an ingredient not on your list, like rice or some sort of pasta (macaroni), that would stretch it without diluting the flavor. I make this soup often and what I do is make meatballs with corn meal and the taco seasoning.

The corn and the beef you can double just remember if you double it you would have to add more liquid. It will bring down the taste if you do not double everything in the soup. I suggest you double everything for taste.

I would add 1# more of ground meat,1 more can roi-tel, and 1more can pintos...That will increase it very nicely.As for the seasoning, go for taste, you decide---easy on the taco seasoning,it's powerful........
