Tortilla wraps are always a winner - fresh veggies (tomatoes, lettuce, avo) with fried chicken strips, spiced to your/his liking, you can add a hot salsa or guacamole..or mushrooms fried with garlic..whatever he likes, and plus its easy and quick.

Fish (hake or butter fish) and garlic bread with a nice salad is also very quick and easy to prepare. Put the fish in a tray put a little butter, lemon juice and spices on it and but the tray and the foil wrapped garlic loaf in the oven..takes about 20 min to prepare.

I have no advise for recipes but I would suggest that your boyfriend could use a little adjustment ,,,, He knows your work schedule and for all I know that's the only schedule you can have ,,,, From what you've explained he's holding you responsible for meals over and above working to support yourself ,,,, I would suggest that if he isn't satisfied with the menu then he try and change it to something more to his liking ,,,, Makes me wonder if he even does house work ,,,, It's not going to hurt him one bit to try and do some cooking himself ,,,, With the schedule you keep you don't need this sort of crap ,,,, As you said this is a silly thing to be arguing about ,,,, I just wonder if he's looking for an excuse to stir up a fire to maybe find cause to move on ,,,, If that's the case then just remember that there are plenty of fish in the pond ,,,, You need some one willing to help you and make you happy not make your life miserable ,,,, You might suggest to him that he learn how to cook if he doesn't know how already and help out with the meals instead of bitching at you when you get home tired from work ,,,,,

I recommend the wonderful, yet quite old invention....the crock pot. If you have to be at work by noon..all you have to do is throw a few fine ingredients in a crock pot...turn it on and BAM...you've got dinner when you come home. This way you have done your share.
Honestly, though, I don't see the point in arguing over dinner. In relationships we all take on roles...seems like cooking is his. I am sure you have yours. COMPROMISE!!!
You can a get a little "crock pot" cookbook at any book store and sometimes you can pick them at the local grocery store ...usually somewhere near the magazines. There are all kinds of people like Rachel Ray...who have shows and books that will help you put together a meal in about 30 minutes. Her show is called "30 minute meals"
I sympathize with you and him. I do all of the cooking at my home and my husband does none. As far as sympathizing with you, when I get off of work...I do not want to head straight into the kitchen to start cooking.

tell him to go take a cooking class at a loca night school, also make meals in advance and put in freezer. Also, see if they have any dinner kitchens in your area.. there are a place where you can go and put together meals, take home and freeze, then cook when want them, this is a new thing in the U.S. and catching on quickly for busy people.
