Leek and potato soup! I even have a cheater recipe which uses frozen mashed potatoes, but you'd never guess it! Let me know if you want it, I can email it in the morning. (And it's a really quick soup too.)

Wash leeks thoroughly by soaking and when preparing look for dirt between top of leek layers. Cut into even slices thick or thin your choice. Cover with water bring to boil add butter/margarine, salt, pepper and small amount of hot mustard to taste. Lower heat to a simmer add milk to double amount in saucepan then add 4-6 Kraft, No name cheese slices and mix about 1.5 dessertspoons of corn flour with milk and add to saucepan, mixing the mixture constantly so as to stop lumps forming. Lower heat so mixture is just making slow bubbles. You can add chopped parsley if you want.
This is also a good base for Leek and Potatoe Soup, use more water add cream instead of milk, cheese is optional as is thickening.
Chilli Leek Summer Salad, blanch leeks until tender, saute quickly with a little oil and fresh garlic remove from heat. Allow to cool/chill add sweet chilli sauce and coriander to finish. lovely with fish.

Try these very nice
Cheese-stuffed chicken wrapped in bacon on creamed leeks
Ingredients
For the chicken
chicken breast
55g/2oz mild cheddar cheese
1 tsp finely chopped, fresh rosemary
5 slices streaky bacon
25g/1oz butter
For the leeks
25g/1oz butter
1 tbsp olive oil
1 garlic clove, finely chopped
½ onion, finely chopped
1 leek, finely sliced
100ml/3½fl oz double cream
sea salt and freshly ground black pepper

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. For the chicken, use a sharp knife to cut a pocket lengthways into the chicken breast. Mix the cheese and rosemary together in a bowl, then stuff the mixture into the pocket of the chicken breast. Wrap the chicken in the slices of bacon to cover and seal the pocket.
3. Heat the butter in an ovenproof frying pan over a high heat. Add the chicken and fry for 1-2 minutes on each side, until the bacon is golden.
4. Place the frying pan into the oven and roast for 15 minutes or until the chicken is completely cooked through.
5. Meanwhile, for the leeks, heat the butter and the oil in a frying pan over a medium heat. Add the garlic, onion and leek, and sauté for 2-3 minutes, until soft.
6. Add the double cream to the frying pan and season, to taste, with salt and freshly ground black pepper.
7. To serve, place the leeks onto a serving plate and top with the chicken breast.

OR this is one my friend does
Leek and asparagus soup
Ingredients
1 tbsp olive oil
½ leek, cleaned and finely chopped
4 asparagus spears, chopped
150ml/5fl oz vegetable stock
100ml/3½fl oz double cream
salt and freshly ground black pepper
crusty bread, to serve

Method
1. Heat the oil in a medium saucepan over a medium heat. Add the leek and asparagus and sauté for 2-3 minutes, to soften.
2. Add the vegetable stock, bring to the boil, then reduce the heat to simmer gently for 8-10 minutes, until the asparagus is cooked through.
3. Transfer to a food processor, add the cream and blend until smooth.
4. Return the soup to the pan, season, to taste, with salt and freshly ground black pepper and warm through gently.
5. To serve, pour into a soup bowl with the crusty bread placed on a plate alongside

OR this quick and easy one
Leek frittata
Ingredients
1 tsp olive oil
½ packet ready-cooked new potatoes with herbs, diced
2 eggs, beaten
2 tbsp double cream
2 baby leeks, chopped
1 tsp fresh mint, chopped
1 tsp fresh coriander, chopped
salt and freshly ground black pepper

Method
1. Heat oil in an omelette pan.
2. Fry potatoes for 2-3 minutes.
3. In a small bowl, mix egg, cream, leeks and herbs. Season.
4. Pour egg mixture into the pan and cook for 3-4 minutes or until the egg is cooked. Serve

Or just add leeks to a stir fry and that is also very nice
Ingredients
500g/1lb stewing pork, cut into 4cm/1½in slivers
2 tbsp soy sauce, for marinade
2 tsp hoisin sauce, for marinade
3 tbsp cream sherry, for marinade
1 leek
2 cloves garlic
1½cm/¾in piece ginger
1 stick lemongrass (or 1 tsp purée)
1 tbsp sesame oil
6 plums, stoned and quartered



Method
1. Marinade the pork in the soy, hoisin and sherry for up to 1 hour, covered.
2. Slice leek. Grate ginger and garlic.
3. Into a wok put sesame oil, when just beginning to smoke add leek, ginger, garlic and lemon grass.
4. Add pork and stir-fry for 2-3 minutes.
5. Add marinade and plums and cook for further 3-4 minutes. Season and serve
with fragrant Thai rice.

Grilled Leek & Sweet Pepper Pasta

Serves: 4
Prep. Time: 1:15

2 med. leeks - cleaned
1 Tbls. olive oil
1 lrg. red bell pepper
1 lrg. yellow bell pepper
1/4 cup butter
1 clove garlic - minced fine
1/3 cup dry vermouth
salt and pepper - to taste
2 cups cooked fettuccini
1 Tbls. chopped fresh thyme leaves - for garnish

-Coat the leeks with olive oil.
-Place the leeks and whole peppers on a hot grill.
-Grill, turning as needed, until leeks are tender and golden brown, about 10-12 minutes, and skin of peppers is charred, about 15 minutes.
-Remove the leeks from grill and let cool.
-Remove the peppers from the grill and place in a paper or plastic bag and seal; set aside and allow to steam.
-When cool, trim root ends from leeks, then cut into thin strips.
-Peel and seed bell peppers and cut into thin strips.
-Heat butter in a large skillet over medium heat.
-Add garlic to skillet and cook, stirring frequently, until pale golden.
-Add vermouth, and reduce to syrupy consistency.
-Stir in leeks and peppers and season with salt and pepper.
-Toss pasta in with contents of skillet.
-Garnish with thyme.
